Lemon Ginger Jam Glazed Tofu Stir-Fry

Lady Jam, on her ventures through the vibrant landscapes of Asia, stumbled upon a culinary revelation: Lemon Ginger Jam Glazed Tofu Stir-Fry. Immersed in the intricate flavors of the East, she learned the art of balance and harmony, infusing the tofu with a glaze that married the zesty tang of lemon and the comforting warmth of ginger. The stir-fry danced with a medley of colorful vegetables, their crisp textures blending harmoniously with the glazed tofu. The Lemon Ginger Jam Glazed Tofu Stir-Fry became a testament to her adventurous spirit, a dish that spoke of her connection to distant lands and the mysteries that unfolded in her exploration of flavors.


For the stir-fry:

14 oz (400g) firm tofu, drained and cut into cubes

2 tablespoons vegetable oil

2 bell peppers, sliced

1 large carrot, julienned

1 small onion, thinly sliced

2 cloves garlic, minced

1 tablespoon grated fresh ginger

Salt and pepper, to taste

Fresh cilantro or green onions, chopped (for garnish)


For the glaze:

1/4 cup lemon ginger jam

2 tablespoons soy sauce

1 tablespoon fresh lemon juice

1 tablespoon water



  1. In a small bowl, whisk together the lemon ginger jam, soy sauce, lemon juice, and water to create the glaze. Set aside.
  2. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the tofu cubes and cook until they turn golden brown and crispy on all sides. Remove the tofu from the skillet and set aside.
  3. In the same skillet, add the remaining tablespoon of oil. Add the sliced bell peppers, julienned carrots, and sliced onion. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
  4. Add the minced garlic and grated ginger to the skillet. Cook for an additional minute, stirring constantly.
  5. Return the tofu to the skillet with the vegetables. Pour the glaze over the tofu and vegetables, and toss everything together to coat evenly. Cook for 2-3 minutes until the glaze thickens slightly.
  6. Season with salt and pepper to taste. Be mindful of the saltiness of the soy sauce when adding salt.
  7. Remove the stir-fry from heat. Garnish with fresh cilantro or green onions.
  8. Serve the Lemon Ginger Jam Glazed Tofu Stir-Fry hot over steamed rice or noodles, and enjoy a flavorful and satisfying vegetarian main dish.

The combination of tangy lemon, warming ginger, and sweet glaze creates a delightful sauce that coats the tofu and vegetables with a burst of flavor.
