Lemon Ginger Jam Chicken

Legend had it that Mistress Jellina crafted this dish with ingredients imbued with mystical powers. The lemon ginger jam, created from lemons plucked under a full moon and ginger harvested from the sacred gardens, possessed a tantalizing aroma that could transport one’s senses to distant lands. The chicken, chosen under the watchful gaze of the moon, was said to absorb the secrets of the night, granting those who tasted it a taste of ethereal wonders.

4 boneless, skinless chicken breasts

1/2 cup lemon ginger jam

2 tablespoons soy sauce

1 tablespoon fresh lemon juice

2 cloves garlic, minced

1 teaspoon grated fresh ginger

Salt and pepper, to taste

Chopped fresh parsley (for garnish, optional)



  1. Preheat your oven to 375°F (190°C) and lightly grease a baking dish.
  2. In a small bowl, combine the lemon ginger jam, soy sauce, lemon juice, minced garlic, and grated ginger. Mix well until the ingredients are thoroughly combined.
  3. Place the chicken breasts in the greased baking dish and season them with salt and pepper.
  4. Pour the lemon ginger jam mixture over the chicken, making sure to coat each breast evenly.
  5. Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the chicken is cooked through and no longer pink in the center. You can baste the chicken with the sauce a couple of times during cooking to keep it moist.
  6. Once the chicken is cooked, remove it from the oven and let it rest for a few minutes. This will allow the juices to redistribute and the chicken to become tender.
  7. Serve the Lemon Ginger Jam Chicken hot, garnished with chopped fresh parsley if desired. It pairs well with steamed rice or roasted vegetables.
