Banana Rum Jam Tart

Ingredients:

For the crust:

1 ½ cups all-purpose flour

½ cup unsalted butter, cold and cubed

¼ cup powdered sugar

1 large egg yolk

1-2 tablespoons cold water

For the filling:

1 cup banana rum jam

2 tablespoons cornstarch

1 tablespoon lemon juice

For the topping:

1 tablespoon granulated sugar

Whipped cream or vanilla ice cream (optional)

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a food processor, combine the all-purpose flour, cold cubed butter, powdered sugar, and egg yolk. Pulse until the mixture resembles coarse crumbs.
  3. Gradually add 1 tablespoon of cold water at a time, pulsing until the dough comes together and forms a ball. Add more water if needed.
  4. Flatten the dough into a disk, wrap it in plastic wrap, and refrigerate for 30 minutes.
  5. On a lightly floured surface, roll out the chilled dough into a circle large enough to fit your tart pan. Carefully transfer the dough to the tart pan, pressing it into the bottom and up the sides.
  6. In a small bowl, mix the banana rum jam, cornstarch, and lemon juice until well combined.
  7. Spread the jam mixture evenly over the tart crust.
  8. Sprinkle the granulated sugar over the top of the jam.
  9. Bake the tart in the preheated oven for about 25-30 minutes, or until the crust is golden brown and the jam is bubbling.
  10. Remove the tart from the oven and let it cool completely before serving.
  11. Serve the Banana Rum Jam Tart at room temperature, optionally topped with whipped cream or vanilla ice cream for added indulgence.
