Apricot Chili Pepper Glazed Shrimp

Through the veils of the Carribean Sea, the drunken sailor encountered a fishmonger who gifted him a hidden gem—a recipe that would forever tantalize his taste buds: Apricot Chili Pepper Glazed Shrimp. The sailor, entranced by the sun-soaked shores and spicy allure of the islands, embraced this secret with a heart full of gratitude. The glaze, crafted from the sweet essence of apricots entwined with the fiery kick of chili peppers, transformed succulent shrimp into a culinary revelation. As the sailor savored each bite, the flavors transported him back to the sandy beaches and the mysteries that clung to the ocean breeze. 

Ingredients:

1 pound (450g) shrimp, peeled and deveined

1/4 cup apricot chili pepper jam

2 tablespoons soy sauce

1 tablespoon fresh lime juice

1 tablespoon vegetable oil

2 cloves garlic, minced

1 teaspoon grated fresh ginger

Salt and pepper, to taste

Chopped fresh cilantro (for garnish, optional)

Instructions:

  1. In a small bowl, whisk together the apricot chili pepper jam, soy sauce, lime juice, minced garlic, grated ginger, salt, and pepper.
  2. Place the shrimp in a shallow dish and pour half of the glaze mixture over the shrimp. Toss to coat the shrimp evenly. Reserve the remaining glaze for later.
  3. Heat the vegetable oil in a large skillet over medium-high heat.
  4. Add the marinated shrimp to the skillet, reserving the marinade in the dish.
  5. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque.
  6. Reduce the heat to medium-low and pour the reserved glaze mixture into the skillet with the shrimp. Stir gently to combine and coat the shrimp with the glaze.
  7. Continue to cook for an additional 1-2 minutes, allowing the glaze to thicken and caramelize slightly.
  8. Remove the skillet from heat and transfer the glazed shrimp to a serving dish.
  9. Garnish with chopped fresh cilantro, if desired.
  10. Serve the Apricot Chili Pepper Glazed Shrimp hot as an appetizer or main dish, accompanied by steamed rice or your preferred side.
