Apricot Chili Pepper Glazed Chicken Skewers

Inspired by the tales spun by the drunken sailor, Mistress Jellina embarked on a culinary exploration that led her to create her own masterpiece: Apricot Chili Pepper Glazed Chicken Skewers. Imagining the flavors of the Carribean, she blended the sweet essence of apricots with the fiery heat of chili peppers, forming a glaze that danced upon succulent pieces of chicken. As the skewers sizzled on the grill, the aroma filled the air, enticing all who caught a whiff of the tantalizing spices. With each bite, the tender chicken harmonized with the vibrant glaze, transporting diners to a world where tropical shores met fiery passion. 

Ingredients:

1.5 lbs (700g) boneless, skinless chicken breasts, 

cut into bite-sized pieces

1/2 cup apricot chili pepper jam

2 tablespoons soy sauce

2 tablespoons fresh lime juice

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1/2 teaspoon chili powder (optional, for added heat)

Salt and pepper, to taste

Wooden skewers, soaked in water for 30 minutes

Instructions:

  1. In a bowl, whisk together the apricot chili pepper jam, soy sauce, lime juice, minced garlic, grated ginger, chili powder (if using), salt, and pepper.
  2. Place the chicken pieces in a shallow dish and pour half of the glaze mixture over them. Toss to coat the chicken evenly. Reserve the remaining glaze for later.
  3. Cover the dish and let the chicken marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  4. Preheat your grill or grill pan to medium-high heat.
  5. Thread the marinated chicken pieces onto the soaked wooden skewers.
  6. Grill the chicken skewers for about 8-10 minutes, turning occasionally, until the chicken is cooked through and has a nice charred appearance.
  7. Brush the reserved glaze over the chicken skewers during the last few minutes of grilling, allowing the glaze to caramelize slightly.
  8. Remove the chicken skewers from the grill and let them rest for a few minutes.
  9. Serve the Apricot Chili Pepper Glazed Chicken Skewers hot, garnished with fresh cilantro or chopped green onions, if desired.
